Some time ago I found similar cookies in an upscale grocery store. They are just amazingly chewy but also crispy on the edges, nutricious and really tasty. I decided to make my own set of these sweet goodies and for the price of a small box, I made the amount for a whole week! It’s a perfect way to start every morning with a steaming cup of coffee.

Serves: 12 cookies
– 150 g all-purpose flour
– 70 g oatmeal
– 1/2 teaspoon baking soda
– 1/3 teaspoon salt
– 1/2 teaspoon cinnamon (optional)
– 125 g softened butter
– 1 large egg
– 50 g sugar
– 100 g white chocolate chips
– 100 g dried cranberries
I put all the ingredients in a bowl and mixed them together with a spoon. :D
The cookies were yummy anyway.
Preheat the oven to 180 °C.
Take your butter, sugar and egg and whisk them up together until a smooth consistency.
In a separate bowl, mix the dry ingredients until all combined.
Put the wet and dry mixtures together, add the cranberries and chocolate. Mix with a spoon.
Put small balls of the dough (ca. 4 cm) on a parchment paper and press with a fork to create 4-5cm cookies.
Pop your cookies into the oven for about 15 minutes.
