Colors Food Rainbow

Rainbow gluten-free cauliflower crust pizza

Recently I’ve been in the mood for colors to surround me, including food (have you checked my rainbow popsicles recipe?). This time I decided to taste a different kind of pizza: gluten-free, vegetarian and with cauliflower crust. The recipe is easy, healthy and beautiful – nothing to add!

Serves: 2-3 people

Prep time: 40 minutes

Cook: 40 minutes


DSC01157Cauliflower crust recipe

– 1 small head cauliflower
– 1/2 cup shredded mozzarella or grated Parmesan
– 1 egg

Preheat the oven to 200°C.
Grate the cauliflower florets or process them in a food processor until a rice-like texture is achieved. In a bowl, combine the cauliflower with cheese and egg. Press the dough out onto a baking sheet. Bake for 20 minutes.

– 1 cup tomato passata
– 1 smashed garlic clove
– basil, oregano, chili powder, salt

Put the ingedients in a bowl and stir until the ingredients are mixed relatively well. I like to add a lot of spices and herbs. A LOT. ;-)




Rainbow vegetable mosaique



Take the crust out of the oven.

Top the pizza with the sauce, mozzarella and vegetables following the rainbow order of colors.

Bake in the oven until melted and bubbly, another 15-20 minutes.

(choose 1 veggie of each color)


1 red pepper

10 cherry tomatoes cut in a half

1 large carrot

1 orange pepper

10 cherry tomatoes 

1 cup squash

1 yellow pepper

1 cup canned corn

1 small zucchini

1 cup broccoli

1 cup fresh spinach

1 large red onion

1 large beetroot
